Ingredients

  • 200 grams lambs livers
  • 2 medium brown onions finely chopped
  • 2 tsp brown sugar

Instructions

  • Finely chop 2 onions, I mean finely, sharpen that knife and chop carefully. When i first started cooking I was on onion duty for ages so this part is my forte 🙂
  • Heat the cooking oil on a medium / high heat.
  • Throw in the onions and the brown sugar.
  • Keep stirring until the onions brown.
  • Turn the heat to high.
  • Time to throw in the liver, I like to slice it so that it’s no more than 1cm thick so that it cooks quicker.
  • It only takes 3-5 minutes to cook on each side keeping the heat on high. Mix it all up and you’re done !! Told you it was quick.
  • Serve with mashed potatoes.
  • Could it be any simpler !!

  2. Sweet Liver Pasta Bake
  3. Sweet Liver Cottage Pie
  4. Sweet Liver Cheesy Foldover

Sweet Liver Jacket Potato
Bake or microwave a jacket potato until soft. Mash leftover sweet liver slightly so the pieces disappear, then spoon it over the potato. The caramelised onions melt into the fluffy centre, the sweetness balances the liver, and the whole thing eats like a cosy stew topping — perfect disguise.

Sweet Liver Pasta Bake
Slice or mash leftover sweet liver into tiny pieces. Mix with cooked pasta and a splash of water or stock to loosen the onion base. Add cheese on top and bake until golden. The sweet onion sauce coats the pasta, the liver becomes invisible, and the bake tastes like a rich caramelised-onion pasta.

Sweet Liver Cottage Pie
Mash leftover sweet liver into the onion base until smooth. Spread in a small oven dish, top with mashed potatoes, and bake until golden. The liver flavour disappears into the sweet onion mix, and the mash on top makes it taste like a proper cottage pie — the best disguise of all.

Sweet Liver Cheesy Foldover
Mash leftover sweet liver until smooth. Spread inside a tortilla with cheese, fold, and pan‑fry until crisp. The cheese and caramelised onions dominate the flavour, and the liver becomes just “soft savoury filling” — simple, fast, and very disguised.
