Kidney Bean Curry

Saleem
If you're a vege these are a brilliant source of protein and fibre and loads of other good stuff.
You can either get dried kidney beans or canned ones which you can cook straight away. If you are using the packets of dried kidney beans soak about a cup in plenty of water. They'll double in size overnight.
The recipe is exactly the same as the chickpea curry recipe which you can find here.
If you're using dried kidney beans from a packet ( rather than the canned version ) you'll have to cook them for 25 minutes in the pressure cooker. If you don't have a pressure cooker you'll have to cook them for 2 hours, keep checking that they don't dry out and add hot water if they do.

Kidney Bean Curry Jacket Potato
Bake or microwave a jacket potato until soft. Spoon warm kidney bean curry over the top. The thick tomato masala melts into the potato, and the beans make it a filling, cosy meal.

Kidney Bean Curry Pasta Bake
Mix leftover kidney bean curry with cooked pasta and a splash of water or stock to loosen. Add cheese on top and bake until golden. The beans act like a protein-rich sauce, and the tomato base becomes a perfect pasta bake.

Kidney Bean Curry Wrap
Warm leftover curry until thick. Spoon into a tortilla with lettuce, onions, and yoghurt. Roll tight and toast the outside. The beans give it bite, and the masala makes it taste like a proper street-food wrap.

Kidney Bean Curry Toastie
Spread leftover kidney bean curry on bread, add cheese, and grill until molten. The beans soften, the masala warms through, and the cheese ties everything together — a surprisingly good comfort snack.

Kidney Bean Curry Quesadilla
Warm leftover kidney bean curry until thick. Spread inside a tortilla with cheese, fold, and pan-fry until crisp. The beans give it bite, the tomato masala acts like a salsa, and the melted cheese ties everything together — a perfect, cheap quesadilla.

Kidney Bean Curry Burrito
Spoon thick kidney bean curry into a tortilla with rice. Roll tight. The beans replace refried beans, the masala replaces salsa, and it becomes a filling, portable meal.

Kidney Bean Curry Nachos
Spread tortilla chips on a tray, spoon small amounts of kidney bean curry over them, add cheese, and bake until melted. The curry acts like a rich topping, and the beans make it surprisingly satisfying.

Kidney Bean Curry Stuffed Paratha
Mash leftover kidney bean curry slightly, spread inside a chapatti or tortilla, fold, and pan-fry. The beans soften, the masala warms through, and it becomes a simple, comforting stuffed bread.

Kidney Bean Curry Loaded Fries
Bake or air-fry chips, spoon kidney bean curry on top, add cheese or yoghurt if you want. The tomato masala works like a topping, and the beans make it a full meal — cheap and very student-friendly.

Kidney Bean Curry Burgers
Mash leftover kidney bean curry with breadcrumbs or mashed potato, form patties, and pan-fry until crisp. The beans give structure, the masala seasons everything, and the burgers hold together beautifully — a cheap, high-protein veggie burger.
