Pretty amazing sweet potato, lentil, apple and carrot soup. The kids were like, what are you putting in that soup! It turned out amazing though and they've asked for it again.

Ingredients
- 100 grams butter
- 2 large sweet potatoes, roughly chopped
- 3 large carrots, roughly chopped
- 1 apple, peeled, cored, roughly chopped
- 1 medium brown onion, roughly chopped
- ½ cup red lentils, washed
- 1 thumb ginger, finely chopped
- ½ tsp black pepper powder
- 1 tsp salt
- 1 tsp cumin powder
- 1 tsp chilli powder
- 1 tsp paprika powder1
- 1 cube vegetable stock
Instructions
- Add the 100g of butter to a large pot on medium heat.
- Throw in the sweet potatoes, carrots, apple and onion and cook for around 10 minutes or until the onions are kinda translucent.
- Add the washed lentils, ginger if using, black pepper, salt, cumin, chilli powder and paprika. Mix it all up.
- Make up like 500ml of vege broth with a stock cube and boiling water and pour that in too.
- Now you need to blend the whole thing. Ideally you have a stick blender which you can just stick in the pot. If not you're going to need to carefully pour the soup into a standing blender and zap it until smooth. Alternatively, I guess you could us a potato masher to mush it all up, the soup will be a bit more chucky but should taste just as good.
