Tuna Melt

This one is for my friend Richard who as it turns out doesn't like tuna !!
Anyway this is a really filling, quick, tasty and cheap – winner.

Ingredients
  

  • 1 can tuna in water
  • 2 tbsp mayonnaise
  • 1 tsp salt
  • ½ tsp black pepper
  • 150 grams cheddar cheese, grated

Optional

  • 1 small brown onion, finely chopped
  • 100 grams sweetcorn

Instructions
 

  • First of all get your tuna ready. Empty a can of tuna in a small bowl, add salt and pepper and throw in a very heaped table spoon of mayonnaise. Mix it all up with a fork and you're done.
    Optionally you can add chopped onions and sweetcorn, this is the time to throw that in too. Mix well.
  • Lightly toast some pitta bread in a toaster or under a grill.
    Fork the tuna mixture onto the pitta bread. I normally portion a small ( 160g ) can to a large pitta or half the can for a small pitta so it's fairly thick layering.
    If you are accompanying with something else like vegetables or making it for the kids just use a thinner layer of tuna.
  • Grill it for 10 minutes on medium / high or until brown. remember you are not trying to cook the tuna here, you're just heating it through.
    Now add a layer of cheese, I like strong cheddar but any will do.
    A sprinkle of mixed herbs such as oregano or just mixed Italian herbs won't do any harm.
    Grill it again for 10-12 minutes on medium / high or until the cheese is nice and golden.
  • That's it – its going to be piping hot inside so let it cool for 10 minutes before tucking in.
