It's sunday so lets make some pancakes. I have 3 children so need to make a good amount of pancakes, if you want to make less just half the measures.

Ingredients
- 1½ cups milk
- 4 tbsp white wine vinegar
- 2 cups plain flour
- 4 tbsp caster sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 2 large eggs
- 4 tbsp butter, melted
Instructions
- Pour the milk into a large mixing bowl and add the white vinegar. Leave the milk to sour for 5 minutes while you measure our the dry ingredients.
- Add the flour, sugar, baking powder, baking soda & salt to another bowl and mix together.
- Now back to the milk, throw in the 2 large egg and whisk. Add 4 tablespoons of melted the butter and whisk it all together. I normally melt the butter in the microwave for 20 seconds as we store out butter in the fridge.
- Time to add the dry mixture into the milk mixture a little at a time. I add around 3-4 tablespoons of dry mixture at a time and give it a good whisk until there are no lumps. Keep going until there is no dry mixture left.
- Good, you should have a thick gloopy liquid; transfer it to a jug and give your bowl a rinse so its easier to wash later. I normally leave the mixture standing for around 20 minutes before baking the pancakes.
- OK, put frying pan on low heat and get it up to temperature. I prefer to use a large frying pan even when making small pancakes so that if they do get stuck I can get under them easily.
- Before you start spray a little cooking oil on the pan and spread it with kitchen towel to line the surface.
- I can't tell you the amount of mixture, that is something you will have to experiment with. I prefer large thin pancakes so I pour a little ( maybe 3-4 tablespoons ) and spread it out by tilting the frying pan around in small circles.
- Give it 3-4 minutes and you should see bubbles forming on the surface of the pancake, wait for them all to pop and turn it over. Cook for another 2-3 minutes and you're done.
